I’ve shared many banana bread recipes on this site, including Coconut Banana Bread, Zucchini Banana Bread, and Banana Bread French Toast. When I was growing up my mom often welcomed my siblings and I home from school with a warm loaf, so my affection for this most basic of quick breads must come from her.
This latest recipe comes from Iwona, one of my helpers who I count on to make my life a little easier. She comes once a week to tidy the house, but she is so sweet and caring and we consider her to be part of the family. Her banana bread recipe is so simple: dump all the ingredients into a bowl, stir, pour, bake. Easy enough for Ben to help:

Iwona’s Banana Bread
1 teaspoon vanilla extract (here’s how I make homemade vanilla extract)
4 brown bananas
1 1/2 cups flour
pinch of salt
1/2 cup sugar (Iwona suggested using less, so I tried 1/3 cup and it was great)
1 teaspoon baking soda
1 egg
1/3 cup oil (I used melted butter)
Mix everything together in a bowl. Pour into a prepared loaf pan. Bake at 350 degrees for 1 hour.
