My uncles had the whole extended family over to their place tonight for a pre-Thanksgiving party. I come from a very large family, so big gatherings are always a lot of fun. Evie and my 5 year old cousin India were best buddies all night – Evie really thought she was a “big girl” for the evening, and India was very considerate in the way she took care of my little 17 month old girl. It was so sweet!
For dessert, I prepared a homemade apple torte that my mom used to make when I was growing up. It is a great fall recipe that makes for a lovely after dinner treat — and an even better breakfast the next morning!
Apple Torte
Crust:
3/4 cup butter, softened
1/2 cup sugar
1/2 teaspoon vanilla
1 1/2 cups flour
Preheat oven to 450 degrees. Cream butter and sugar until light and fluffy. Blend in vanilla. Add flour and mix well. Drop into a 9″ springform pan and press out evenly.
Filling:
8 oz cream cheese, softened
1/4 cup sugar
1 egg
1/2 teaspoon vanilla
Combine cream cheese and sugar. Blend in egg and vanilla. Pour on top of unbaked crust in pan.
Topping:
2 granny smith apples, peeled and thinly sliced
1/3 cup sugar
1/2 teaspoon cinnamon
Toss apples with sugar and cinnamon. Arrange on cream cheese layer. Bake at 450 degrees for 10 minutes. reduce temperature to 400 degrees and continue baking for 25 minutes. Remove from oven and loosen rim of pan from crust. Cool before completely removing rim.

I just made this last weekend for my mother in law's birthday…she doesn't do cheesecake but loved it (so did everyone else). I loved that it was delicious and so easy to make. Keep those recipes coming!
