Lately we’ve been enjoying bacon and eggs for breakfast. It is such a hearty way to start the day, and the eggs from our co-op are delicious in an addicting sort of way. But, with summer here I am now in the mood for a lighter start to the day, so I’ve brought back our smoothies. We usually make one with blueberries and spinach, but with the lovely strawberries at the farmers market I thought I’d try a recipe for a strawberry lassi, an Indian yogurt drink that cools and soothes.
I saw a strawberry lassi recipe in this month’s issue of Bon Appetit calling for buttermilk, but I didn’t have any on-hand, so I used homemade yogurt instead. I loved the magazine’s suggestion of coconut milk in the lassi – not only did it impart a slightly tropical flavor to the drink, but I’m not a big fan of regular milk so this was a lovely substitution. I slightly reduced the amount of sugar, and I increased the quantity of strawberries, too.
The kids and I loved this healthy start to the day!
Strawberry Lassi (serves 1 mom and three littles)
3 cups strawberries, stems removed
1 cup full-fat yogurt
2/3 cup coconut milk
1 1/2 tablespoons sugar
a cup of ice
Mix all ingredients in a blender until smooth.
