I am always on the hunt for tasty homemade meals that produce a minimal mess. This search frequently brings me back to simple slow cooker meals – toss everything into one dish, clean up the prep, and go live life while the machine does the rest of the work. Ahhhhh.
I’m especially glad I had a slow cooker meal tonight. Evie has pink eye (ewwwwe) and the only doctor appointment I could get was at 4:20 pm. After taking all four kids to the doctor it was so so so so so SO nice to come home to a dinner that was ready to go.
This opposite of fancy BBQ chicken recipe is so supremely easy. Our wonderful babysitter Nataliya threw it together today while I was out of the house, and even though she had my four little ones hanging on her she did a great job. The best part? Everyone LOVED the meal. They all seriously chowed down!
Slow Cooker BBQ Chicken
1 bottle of BBQ sauce (look for one without high fructose corn syrup)
1 small yellow onion, chopped
2 garlic cloves, minced
2 pounds chicken – I used two chicken breasts and four chicken thighs
Little slider buns
Toss everything into a slow cooker and cook on LOW for 7 hours. Shred the meat and put it back into the sauce. Serve on buns.
