Scrabble on a Dark & Stormy Kind of Night

Since Ben arrived back in March, life has pretty much been a blur.  For me, it is all about getting through the day keeping everyone mostly happy and well fed, while keeping myself mostly awake as I eat leftovers off the kids’ tiny plates.  Chris is working like crazy, and by the time he gets home from work we are both simply exhausted.

I’ve missed him.

So when he suggested we have a Scrabble night last Saturday, I couldn’t have been more excited!  After we put Evie, Mack and Vivian to bed, Chris set up the board and I mixed up a few simple cocktails. I love love love anything with ginger, so this recipe for a Dark & Stormy includes a generous pour of ginger beer.  While ginger beer is non-alcoholic, the dark rum mixed in certainly is not.  I’m such a lightweight these days – one of these drinks and I was done!

I lost at Scrabble, but I’m pretty sure Chris snuck in a few words that were borderline not allowed.  After he set down “JOTE” I had to Google it – much to our amusement, the Urban Dictionary definition for it was “a word that seems perfectly reasonable when playing Scrabble.” HA!!

Dark and Stormy Cocktail

Ginger beer

Dark rum

Limes

Fill a tall glass with ice.  Squeeze juice from one lime over ice, and toss in the lime peels.  Fill the glass 3/4 full with ginger beer and top with a hearty glug of dark rum.  Stir, if desired.
