I seriously don’t know what I would do without my mom. While I realize that might be a largely universal statement from most women at some point in their lives, I really, really, REALLY mean it. Especially these past few months while this twin pregnancy has completely taken over my body and life. I am so exhausted and uncomfortable all the time, and my mom seems to have a sixth sense for when I really need an extra hand around the house or with the kids.
Take the other night, for example. I worked a full day and returned home with feet and ankles so swollen I could barely walk. Somehow my mom just knew that I needed the night off. So she made us a homemade dinner and dropped it off! Ham & cheese sliders, sweet potato salad, spinach/artichoke/olive/tomato salad, and an extra delicious cucumber and fennel salad. She is a very good cook and rarely relies on a recipe, so when I told her I could eat a trough of the cucumber salad and that I needed the recipe, she gave me a quick rundown of the ingredients. Here it is to serve as inspiration!
Cucumber & Fennel Salad
Cucumber, sliced
Fennel, sliced
Green onion, sliced
Fresh dill
Olive oil
Lemon juice
Feta cheese (optional)
Toss everything together. That’s it
