Whenever I ask Evelyn what she’d like to have for dinner the answer is always the same: “Peets-ahh.” Since I can’t serve her pizza every night, but I still like to treat her to a fun meal, I’m forced to think outside the box. I came up with this recipe tonight while she and I were walking to the grocery store to pick up dinner ingredients. She loved having her “peets-ahh” and Chris and I enjoyed some Mexican flavors.
A bonus about this meal is that it is quick and easy to assemble. I’m still learning how to juggle a toddler and a newborn with all the usual household chores and tasks. I want to make nice meals for my family, but time is a real luxury for me these days. Until I have more of a routine with the two little ones I’ll be looking for ways to save time in the kitchen. Total active time for this dinner was about 15 minutes, and clean up was a breeze as I only used two pans.
My Taco Pizza Pie
olive oil
1 onion, diced
2 jalapenos, one chopped and one sliced in rounds
1 pound ground turkey
taco seasoning (or you can make your own like I do, see below)
pre-made pizza dough (I used this one from Pillsbury)
3/4 cup shredded cheddar cheese
2 tomatoes, sliced
handful of chopped cilantro
sour cream
Preheat oven to 425 degrees.
Heat a large pan over medium-high heat. Add olive oil. Add onions and one chopped jalapeno. Cook until onions begin to soften. Add ground turkey and cook till almost done. Add taco seasoning. If you are making your own, add a few good shakes of dried oregano, chili powder, cumin, crushed red pepper flakes, paprika, onion powder, garlic powder and salt with 1/4 cup corn starch and 1/2 cup water to meat. Stir well.
Spray a 12″ oven-safe skillet or pie pan with cooking spray, preferably using the Misto sprayer as it saves money and reduces waste. Lay pizza dough in skillet. Fill with meat and top with cheese. Bake for 20 minutes, or until crust is brown and cheese is melted.
Slice and top with slices of fresh tomato, fresh jalapeno, chopped cilantro and sour cream.

Charlie loves pizza, too. I make it almost every week since it's so easy and healthy. Bread machines make great (and healthy) wheat dough, then I top it with a small amount of fresh mozzarella, homemade tomato sauce (I make a lot and freeze it) and a lot of fresh veggies. It feels like a treat despite being healthy.
You're so right – pizza can be healthy! Especially when made at home so you can be sure of exactly what's going on it.
I made this last night and it is so good! And it was easy to bring for lunch the next day.
