I prepared our final Meez Meal for dinner last night. Just like the first four meals, the Sicilian Pasta with Cauliflower and Herbed Oil was easy to assemble and completely delicious. I have leftovers for lunch today and I’m already getting hungry!

Sicilian Pasta with Cauliflower and Herbed Oil
2 heads cauliflower florets
2 cups chickpeas, rinsed and drained
12 oz whole wheat pasta
1 cup panko (Japanese bread crumbs)
½ cup sliced almonds
Small handful of raisins
Small handful of capers
Herb oil (1/4 cup olive oil loaded with chopped fresh parsley, tarragon, thyme)
Preheat oven to 375 degrees.
Put the cauliflower and chickpeas onto a rimmed baking sheet and drizzle with olive oil, salt and pepper. Toss well and bake for 20 to 25 minutes, until the cauliflower is tender and lightly browned.
While the cauliflower is roasting, bring a large pot of water to a boil. Add salt (it should taste like salt water) and the pasta and cook until al dente, about 8 to 12 minutes depending on the kind of pasta you’re using. Drain and return to pasta pot.
Heat a large skillet over low heat an add 2 T butter or olive oil. Add the panko and toast for 1 to 3 minutes, until it’s a little golden brown and delicious. Remove from the pan and add the almonds next. Cook them for 2 to 3 minutes, then set aside.
Stir cauliflower/chickpeas into cooked pasta. Toss in raisins and capers. Pour in herbed oil and stir very well to evenly coat the pasta. Spoon into bowls and top with bread crumbs and almonds.

The meals sounded good all week and they deliver to my area! Especially the roasted artichoke and cherry tomato paella. I’d love to try them.
