I made such a pretty lunch today, so I thought I’d share it. A salad full of bright colors and generous flavors is the perfect way to load up on more than a few of my daily vegetable servings. And, the homemade lime dressing took about 32 seconds to make – waaaay healthier (and cheaper!) than anything I could get out of a bottle.
A few handfuls mixed baby romaine lettuce
1/2 avocado, diced
1/2 red pepper, diced
Palmful kalamata olives, sliced in half
1 tomato, diced
Dressing:
2 parts lime juice
3 parts olive oil
Genersou dash of cumin and chili powder
Quick sprinkle of salt
Whisk dressing ingredients together. Toss salad ingredients. Pour dressing over salad – enjoy!

This reminds me of the delicious avocado-tomato salad recipe from our local Ethiopian restaurant. You really can’t go wrong with avocado and in-season tomatoes.
