After spending an afternoon canning homemade blueberry jam and blueberry syrup, I still had a few pints of organic blueberries remaining. While I love snacking on blueberries in their natural state, I thought it would be fun to sweeten them up a bit. We had a bag of leftover Easter chocolate hiding in the pantry, so I melted it and tossed in some berries. A few hours in the freezer later and we were enjoying mini bites of chocolatey-berry goodness! Kind of like little bursts of chocolate-blueberry ice cream!
Wash and dry blueberries.
Melt chocolate in the microwave on 30 second intervals. Stir between each interval. I used milk chocolate, but I think dark chocolate or white chocolate would be divine, too!
Toss a few blueberries into the chocolate and roll around. Drop covered berries onto a parchment paper lined baking sheet.
Cool in the fridge or freezer. Once chocolate hardens, put berries into a freezer safe container. Freeze for a few hours.
