After a summer of sun and temperatures steadily in the 90s, we were bound for a cool down at some point. Today’s rain and 70 degrees felt downright chilly, so the kids and I spent much of the day indoors. It feels like we’ve been on the go nonstop since May – it was actually kinda nice to have a quiet day.
With that said, however, it was still a challenge to keep everyone entertained and relaxed. To fill up some time I asked Evie and Mack to help me make a special lunch. I spied a bag of marshmallows in our pantry, and I knew I had a jar of homemade peanut butter in the fridge. The perfect opportunity to introduce them to the wonders of a fluffernutter sandwich! I have a distinct memory from my childhood of my mom serving fluffernutter to my sisters and I for lunch on a rainy day. How fun that my kids now have a similar memory all their own!
While a gooey and melty fluffernutter sandwich isn’t the definition of a healthy lunch, a bowl of blueberries and some carrot sticks lessen the cringe factor. I am on the hunt for marshmallows made without high fructose corn syrup, so if you see any let me know…!!!
Toasty Fluffernutter Sandwich
bread
peanut butter (I always use homemade peanut butter)
3 large marshmallows per slice of bread, cut in half
Turn the broiler on. Lay a sheet of foil on a cookie sheet.
Spread peanut butter onto slices of bread. Top with six marshmallow halves.
Put into the oven for 2 minutes or until marshmallows are melty and toasty. Keep an eye on it – the tops will burn if you’re not careful!
Serve to happy kids and adults alike – and be sure to wash those sticky fingers when you’re done!

I love fluffernutter sandwiches. Yes, they aren’t healthy but once a year.. oh well. I have a homemade fluff recipe that I use in ours. Instead of open faced ad toasted like you did, I close the sandwich and grill it. It’s delicious and in the rare occasion we eat them it’s worth it. I’m not sure. when I use it in a sandwich I put a lid on it with another piece of bread because it has the “fluff” texture. I’m working on developing a marshmallow recipe as we speak.

Also, I have a friend who makes her own marshmallows using maple sugar (because she’s gluten intolerant). I’ll see if I can get the recipe.
If you have a Whole Foods nearby, they make their own marshmallows at certain times of year. It would be worth asking the bakery staff if they use high fructose corn syrup.
