Chris was out of town on Friday and Saturday, and I was surprised by how much I missed him. Not only do I appreciate his help with the kids on the weekends, but he’s my favorite person to hang out with. When he’s gone I miss his handsome face and strong arms and cheerful personality. Life just isn’t the same when he’s not around.
We have three little kids, so our weekend nights are usually quite tame. But, that doesn’t mean a simple moment can’t be special. Tonight we put the kids to bed on time at 7:30 and then Chris prepared a delicious dinner: cilantro salmon, mango-cucumber salsa and pico de gallo. So fresh and healthy and delicious. The perfect way to wind down the weekend and prepare for another week ahead.

Chris’ Salmon
lemon slices
olive oil
salt, lots of pepper
cilantro, chopped
Heat grill to medium-low. Or, preheat the oven to 375 degrees.
Place the individual salmon fillets on large pieces of foil. Rub fillets with olive oil, sprinkle with salt and pepper, and top with cilantro and lemon slices. Wrap foil around the fillets and place on the grill for exactly 17 minutes. Remove from grill, unfold foil and serve.
Mango-Cucumber Salsa
1/2 cucumber, peeled and chopped
3 green onions, chopped
1 jalapeno, seeded and chopped
1 lime, juiced
salt
Combine all ingredients in a bowl and stir well.
