Every morning for the past several weeks, Mack has been waking up earlier and earlier. He used to greet the morning around 7:30 – today we reached a new low with his 5:50 wake up call. Buddy, its still dark out!! And, since he shares a room with Evelyn, they both were ready to start the day at 6:10. Which means that I, too, started another weekend day much too early.
To make the best of a bleary-eyed situation, I employed the kids to help me with breakfast. Helping me in the kitchen is one of Evie’s favorite things to do. I pull the stool up to the counter and she pours and stirs and watches. Little Mack gets samples to taste. It really is a lovely way to greet the day.
Today the three of us made a baked apple pancake inspired by Walker Brothers Pancake House, a Chicago-area breakfast restaurant known for its version of this puffy, buttery, sugary breakfast entree. I’m pretty sure Mack ate more food than ever before. Evelyn was just as delighted – in between forkfuls she kept saying “Mommy, this is delicious. This is so good!”
Baked Apple Pancake
4 tablespoons butter
2 Granny Smith apples, peeled and sliced
1/2 cup sugar
1/2 cup light brown sugar
2 teaspoons cinnamon
4 eggs, beaten
1 cup milk
1 cup flour
1 tablespoon baking powder
Preheat oven to 425 degrees.
Combine apples, sugar, brown sugar and cinnamon in a bowl. Stir until apples are coated.
Melt butter in a medium skillet over medium-high heat. Once butter has melted and bubbling subsides pour in apples/sugar. Let cook for 8-10 minutes.
Meanwhile, in the same bowl used for the apples, combine flour and baking powder. Add milk and eggs and stir well (there may be a few lumps – that’s ok). Pour batter on top of apples. Move pan from the stovetop to the oven and cook for 20-25 minutes.
Once baking is complete, remove pan from oven (be careful – the handle will he HOT!) and invert onto a large plate. Slice and serve to a very happy family!

I am new to your website, but have been loving exploring and found this recipe last week, just in time to host a brunch for about a dozen runners from my husband’s runnin club after their 10K run yesterday. I made the apple pancake along with a strata, cinnamon rolls, fruit tray, and blueberry cobbler, and it was a hit! I will definitely be making this again, probably at about half-size for just the two of us some weekend morning. I am also thinking about adding pecans to the apple mixture. Has anyone mixed it up this way?

Soooo delish! I made two this time because my daughter said she wanted leftovers for the next day and knew there wouldn’t be any left from the first one. It was her birthday breakfast request!
I’m from Chicago. Walker Brothers pancake house is the best breakfast place. We love their apple pancake. I’m about to try this recipe. I hope it taste just as good.
