Sunday mornings are always quite busy for us. After dropping my husband off at work, Evelyn and I take care of a few errands and all the grocery shopping for the week. By the time we get home we are both ready for lunch and Evie is getting ready for her nap.
But, just because I am in a hurry to get lunch on the table doesn’t mean I don’t have time to put together something healthy and delicious. Today I made an open faced veggie sandwich that filled me up and took less than 5 minutes to assemble.
1 slice whole grain bread
2 tablespoons low-fat ricotta cheese
a few slices of hothouse cucumber
1/2 avocado, sliced
sliced tomato
salt
Toast the bread. Spread the ricotta cheese on the toast and top with cucumber, avocado and tomato slices. Sprinkle a little bit of salt on top. Enjoy!
To round out the meal, I tossed together some chick peas, cubed tofu, parsley, lemon juice and olive oil for a protein-rich side salad.
