Homemade BBQ Chicken Pizza

While I’m finally starting to get into some sort of routine with the two little ones, I still struggle with getting everything on my to-do list done in one day. By the time evening rolls around, I’m exhausted and almost out of energy. But, since I am a homemade mother I still see the value in putting a healthy and tasty homemade dinner on the table. So, lately I’ve been looking for short-cuts and new recipes.

Inspiration for last night’s dinner came from my sister’s very nice boyfriend Rob. He liked Trader Joe’s BBQ chicken pizza, but thought he could do better on his own (a homemade father in the making?!). So, he used the ingredient list on the box as his shopping list!

I also went to Trader Joe’s to pick up ingredients. I was beyond excited to find BBQ sauce that doesn’t have high fructose corn syrup. As I’ve written about before, HFCS is an icky ingredient added to just about every processed food. It offers no nutritional benefit, and many studies suggest it is quite unhealthy. The sauce from Trader Joe’s tastes great.

BBQ Chicken Pizza

Chicken
Whole wheat pizza dough (make your own, or, if you’re like me with little ones taking up 98% of your time opt for the refrigerated stuff from Trader Joe’s!)
BBQ sauce
Shredded mozzarella cheese
Gouda cheese, diced
Half of one red onion, diced
Fresh cilantro

Preheat oven to 350 degrees.

Cut chicken into small pieces. Heat a saute pan over medium heat and spray with some olive oil (preferably using the Misto to cut down on waste and save a few bucks). Drop chicken pieces onto hot pan and cook through. Set aside.

Roll out pizza dough into whatever shape you like. Since I was pressed for time and didn’t really care, my crust kinda looked like a drunk rectangle. Spread on a thin layer of BBQ sauce. Top with chicken, cheeses and onion. Bake in oven till crust is browned and cheese is bubbly. Remove from oven and sprinkle on some fresh cilantro.

    This is one of my favorite kinds of pizza's to make-I use a shredded mexican blend of cheese instead though! YUM!
