Ever since Chris gifted me with a fancy blender for my birthday earlier this year, I have been having lots of fun trying out new recipes. I use the countertop machine almost every day, making quick sorbets, pureeing soups and whirling up smoothies. A couple months ago I posted a recipe for Maureen’s Green Drink, and now I have moved on to a slightly modified version. Unlike traditional “juicing”, my version does not strain out all the natural fiber, so I am fuller longer and I don’t get a massive sugar rush.
This recipe is sweet and tart and totally refreshing. I insist on starting every day with one!
Spinach and Citrus Green Drink
Juice from 1-2 oranges
Juice from 1 lime
A piece of ginger, peeled (use as much as you like – I like ginger a LOT so I use at least a 1″ piece)
A small piece of fresh tumeric, peeled (optional because it can be hard to find, but if you see it at the store, grab it!)
1 green apple, peeled and sliced (I usually leave half the peel on)
2-3 big handfuls of baby spinach
Combine everything in a blender and whir until it is smooth (you might need to add a little water). Serve over ice.
