Quinoa Pancakes for Breakfast

Sunday mornings are my favorite.  We usually bring the kids into bed with us so we can all snuggle and doze a little longer than usual, and then the kids and I make a nice breakfast together.

I found this quinoa pancake recipe in last month’s Everyday Food magazine, and I immediately knew it would become a Sunday standby.   I always have all the ingredients in the pantry, so putting it together doesn’t require any planning ahead.  And, quinoa is a super food – five grams of fiber and eight grams of protein per serving, plus plenty of folate, iron, magnesium and zinc.  It is one of the few non-meat foods that offers all eight of the essential amino acids our bodies use to repair themselves.

Everyone in the family loves this recipe just as much as we love regular pancakes and protein pancakes.  I’m pretty sure little Mack ate almost as much as his dad!

Quinoa Pancake Recipe

1 cup cooked quinoa or brown rice
3/4 cup all-purpose flour (I use 1/2 cup regular flour and 1/4 cup whole wheat flour)
2 teaspoons baking powder
1/2 teaspoon salt
1 large egg, plus 1 large egg white
1 tablespoon butter, melted
1/4 cup milk
2 tablespoons pure maple syrup

In a medium bowl, whisk together quinoa, flour, baking powder, and salt. In another medium bowl, whisk together egg, egg white, melted butter, milk, and syrup until smooth. Add egg mixture to flour mixture and whisk to combine.

Lightly coat a large skillet or griddle with butter and heat over medium-high.  Drop spoonfuls of batter into skillet.  Cook until bubbles appear on top, 2 minutes.  Flip cakes and cook until golden brown on underside, 2 minutes. Wipe skillet clean and repeat.  This recipe makes enough for my little family of two adults, one growing toddler and one growing baby.

Serve with pure maple syrup to a happy family.

    Ok so I thought they were awesome! K said, "Mom, these pancakes seem like you forgot to add something." I said, "Do you like them?" K said, "they are interesting" I said, "Interesting Good or interesting bad?" She said, "Interesting bad. but at least I tried them!" Em wasn't so thrilled either. I'm not giving up. They are SO yummy and healthy! I love them! Thanks for posting.

    Sorry the kids didn't like them, Paige. They are a HUGE hit in our house.

    I made turkey meatballs and spaghetti for dinner tonight, and instead of using breakcrumbs in the meatballs I used cooked quinoa. They turned out really, really good.

    Made these yesterday morning and Serafino and I both enjoyed them. I don’t have any maple syrup (need to get some) so I used Agave instead which worked well. We had leftovers so I reheated them this morning and we enjoyed them again. I like to keep things like this in the fridge for snacks because they are portable fun finger food for all of us when we are on the go. I really appreciate the protein as a mild hypoglycemic since I usually do not risk having sweet pancakes in the morning and this gives me an option now.

    yumm never thought of trying these for breakfast! I make a savory version with cottage cheese, cheddar cheese, green onions, hot sauce, etc. and serve it for dinner (one of my favorite recipes… originally found it here: http://eatingwelllivingthin.wordpress.com/2010/11/01/love-my-quinoa-burger/) this breakfast version sounds splendid! will definitely have to try it one of these saturday mornings!!

    I LOVED these pancakes! I added a banana to mine and they were delicious. For kids who may not like them, maybe added a banana or other fruit in the mix or even apple sauce would sweeten them up a bit. Great recipe 🙂

    I randomly google quinoa pancakes 8 years ago and found this recipe. It was when I was transitioning our first into solids and I wanted to make sure he was getting a little more protein here and there. They quickly became a favorite and 8 years later they still are!

    We tried your Sunday pancakes recipe yesterday and the kiddos just gobbled them up!
