Mmmm…dinner

Came up with a good dinner recipe tonight. Just like salad, its easy to create new and unique pasta recipes using whatever you have in the pantry and fridge. As long as I have a few key ingredients on hand, I can almost always put something together.

Here’s my list of kitchen must-haves:
Wedge of Parmesan cheese
Good olive oil
Tomatoes
Kosher salt
Balsamic vinegar
Lemons
Few different kinds of pasta
Chicken broth
Onions
Fresh garlic
Jar of roasted red peppers
Crushed red pepper flakes, dried cumin and dried oregano
Chicken breasts in the freezer
Frozen veggies
Zucchini

Wednesday Night Pasta

Olive oil
2 cloves garlic, minced
1 red bell pepper
1 package chicken sausage, casing removed (I used Trader Joes red wine & cheese)
2 tomatoes
1 zucchini
1 teaspoon salt
3/4 lb penne pasta (or whatever you have on-hand)
1/2 cup grated Parmesan
1 tablespoon butter

Cook pasta according to package directions. Drain.

Meanwhile, heat olive oil in a large pan and add garlic. Cook until fragrant, about one minute, and add red pepper. Cook a few minutes, and add sausage, breaking it up with a spoon. Heat until sausage is cooked through. Add tomatoes zucchini and salt. Cook for a few minutes (until tomatoes start to break up). Add pasta to pan and stir well. Add butter and cheese and stir until both are well incorporated.

Top with some more cheese and enjoy!
