I’m feeling a little under the weather today. Despite getting plenty of sleep last night, I am exhausted. And, I have no appetite so I haven’t eaten much today. I suspect a day-long bout of nausea is due to this pregnancy, too. So, after trying quite ridiculously and unsuccessfully to get my husband to leave work and fetch me a smoothie from Jamba Juice, it was time for me to nourish my body with a healthy homemade snack.
I scanned the kitchen for a few ideas. Honey and ginger always make me feel better, and I made a fresh batch of homemade yogurt the other day. In the freezer was a stash of frozen mango. All these ingredients reminded me of a mango lassi, a comforting and tasty Indian yogurt drink. So, I tossed it all in the blender and ended up with a perfectly nutritious and delicious pick-me-up.
Mango Lassi with Ginger and Cardamom
3/4 cup yogurt (I love using homemade yogurt)
1 cup chopped mango (I use the frozen stuff from Trader Joe’s)
1/8 teaspoon cardamom
1 inch piece peeled ginger
1 tablespoon sugar
1 tablespoon honey
dash of Kosher salt
a few ice cubes
Pour milk into blender. Add all other ingredients. Blend until smooth.
