Saturday morning. If ever there was a time for a homemade breakfast, the weekend would be it! We let the big kids watch a couple cartoons, Ben runs the length of the house over and over and over again, sometimes I go to the gym. It is a lazy day deserving of fun meal.
Enter: homemade waffles and pancakes.
Fortunately, I always have homemade mix on hand. Store bought mixes like Bisquick are loaded with trans fats, and by now everyone (including my kids!) knows that those are a BIG no-no. Homemade is always healthier and less expensive.
Once or twice a month I prepare a big batch of this simple homemade pancake and waffle mix. A little advance preparation saves me a lot of time collecting and measuring ingredients. With the extra time I had on Saturday, I enjoyed a few quiet (and rare!) minutes to sip my homemade matcha latte while browsing through a cooking magazine. Ahhhh.
Homemade Pancake & Waffle Mix
4 cups flour
4 tablespoons baking powder
2 teaspoons kosher salt
1/2 cup sugar
Combine ingredients in a large bowl and whisk well. Store in a large mason jar or lidded container.
When it is pancake or waffle time, combine 1 generous cup of mix with 1 egg, 1 cup milk and 2 tablespoons of melted butter for pancakes or 4 tablespoons of melted butter for waffles. Pour into hot griddle for pancakes or into a waffle iron.
