Homemade Banana Pie for the Birthday Boy

My baby boy turned one last week.  I am in utter disbelief.  How can my little man already be old enough to clap, jump, say “mama” and “da!”, climb on to everything and hold up one finger to let us all know how old he is?!  I think one of the hardest parts about being a mother is the realization that time stops for no one.  No matter how hard I want to slow things down so I can savor the moment, time marches on.

As a Homemade Mother, of course I wanted to bake a homemade birthday cake for baby Mack.  But, we were vacationing on Isla Mujeres, a tiny island off the coast of Mexico, and I had no idea what kind of supplies the local mercado would offer.  With a little planning ahead, I was able to make a special treat that came together quite easily while the birthday boy napped.  With graham crackers and pudding from the US, and some basic ingredients I bought once on the island, I made a homemade banana cream pie. A perfect way to welcome another year for sweet Mack.

Easy Homemade Graham Cracker Crust

16 graham crackers (two packages from one box), crushed

1 stick butter, melted

1/2 cup sugar

Preheat oven to 375 degrees.  In a bowl, combine graham cracker crumbs, melted butter and sugar.  Press mixture into two pie pans.  Bake for 6-7 minutes.  Remove from oven and cool completely.

Easy Homemade Banana Cream Pie

2 large (5.1 oz) boxes instant vanilla pudding

8 oz cream cheese, softened

16 oz sour cream

1 1/2 cups milk

3-4 bananas, chopped

In a large bowl, stir pudding mix, cream cheese, sour cream and milk until smooth and well combined. Layer the chopped bananas into two cooled graham cracker crusts.  Top with pudding mixture.  Refrigerate pies for at least a few hours. Serve to a happy birthday boy!
