Christmas Cookies – Day 3

Christmas fun continues!

I don’t want to believe that Christmas is the day after tomorrow. The kids really enjoy all the festive decorations and music, and I think we’ll all be a little sad when it comes time to pack everything away.

My favorite part of today was when Mack danced for the first time! Chris had been humming the holiday classic “Christmas Wrapping” by the Waitresses all day, so I asked him to find it on-line and play it. As soon as he turned it on a little dance party erupted in our house. Mack was sitting in his high chair, and he just couldn’t contain his excitement. As he rocked back and forth to the music he smiled widely and laughed out loud. Evie leaped from her chair at the dinner table to spin and jump on the floor. So much fun!

When Mack went to sleep Evelyn and I made a batch of very simple Christmas cookies. My little girl is so anxious to help. I measured the ingredients and she poured them into the mixing bowl. I’m so glad we had this time together – just the two of us.

Nut Crescents require only a few ingredients, but there is something rather indulgent and special about them. I think Evie would have been content to just eat the dough – I caught her stealing nibbles as I rolled out the cookies!

Nut Crescents

1 cup butter, softened
1/3 cup sugar
1 teaspoon vanilla
2 cups flour
1/2 cup chopped nuts
Powdered sugar

Preheat oven to 350 degrees.

Combine butter, sugar and vanilla until light and fluffy. Add flour and nuts and mix well. Roll dough into desired shape – crescents if you’ve got the time, or just roll into little balls like I did tonight.

Bake for 15-20 minutes. Remove from oven and drop one-by-one into a bowl of powdered sugar. Toss lightly to coat each cookie and transfer to a cooling rack.
