Christmas Cookies – Day 2

Day 2 of Christmas cookie baking!

Butterscotch Haystacks were a favorite in our household when I was growing up. Like yesterday’s Cornflake Wreath recipe, today’s cookies require no baking and are quite easy to make while juggling two little ones. My sister Caitie always made them, and even today while I made a batch at my mom’s house I caught her stealing bites and nibbles. I guess some things never change. 

Today’s holiday festivities went beyond cookie baking. My mom invited her daughters and our kids to a lovely Christmas tea. Evelyn, in her new Christmas dress, made friends with two other little girls also clad in their holiday finest. She really loves a party!

Mack couldn’t take his eyes off the violinists performing Christmas classics. I’ll forever remember how intently he watched the musicians. He looked like he was humming along to the tunes!


Butterscotch Haystacks

2 11 oz bags butterscotch chips

2 cups peanut butter

10 cups crunchy chow mein noodles

In a large bowl, melt butterscotch chips and peanut butter in a microwave or on the stovetop over a double-boiler. Stir until very smooth. Pour in chow mein noodles, and stir well to thoroughly coat the noodles.

Drop by spoonful onto wax paper. Cool and store. Serve to the ones you love!

    We have a similar recipe in our family of no-bake cookies with pretzel sticks, peanuts and Captain Crunch cereal mixed into melted white chocolate, stacked and cooled. It’s such fun to make no-bake!
