Chocolate Cake Mix Rice Krispie Treats

We are finally getting settled in our new home.  The move was long and exhausting – there were a few moments when I just wanted to call it quits.  But, my Army captain husband kept us on task and moving in the right direction, and on more than one occasion I looked at him in awe.  Not only was he strong enough to lift the heaviest boxes, but he was calm and patient throughout the entire process.  Thank God for Chris!

Now that the boxes are unpacked and we’re slowly easing into a new routine, life is starting to feel normal again.  Yesterday afternoon while Mack napped and the Comcast guy installed our cable/internet/phone, Evie and I got to work in the kitchen.  A few months ago I found a recipe for cake mix rice krispie treats floating around Pinterest.  It seemed like a delightfully simple way to jazz up an already delightfully simple dessert.  Evie and I changed the recipe slightly based on what we had in the kitchen, and it turned out great.  When Mack woke up from his nap he couldn’t have been more pleased with his afternoon snack!

Chocolate Cake Mix Rice Krispie Treats

3 tablespoons butter

10 oz bag mini marshmallows

1/2 cup chocolate cake mix

6 cups krispie rice cereal

Melt butter in a large pot over low heat. Add marshmallows. Stir until they begin to melt.  Mix in cake mix one spoonful at a time. Stir in cereal until it is completely coated with the chocolatey marshmallow mixture.

Lightly grease a 9×13 pan (I use coconut oil because it adds some extra sweetness) and press krispie mixture in.
