My husband is out of town at a bachelor party this weekend. So, that means it’s just me at home with the two little ones. For many people this might mean a long 72+ hours, but I am perfectly content. Yes, it is a LOT of work keeping a toddler and a newborn happy, well-fed, clean, and engaged, but this is my job and I love it.

Since I won’t be getting any help anytime soon I needed to come up with a way for me to relax and enjoy the weekend. I may be in my pajamas at 8:45 on a Friday night, but that doesn’t mean I can’t unwind with a bit of booze! My drink of choice for the evening? Pimm’s Cup. I discovered this drink a few weeks ago at a new restaurant in town. There are about a million recipes for this classic British cocktail on-line, but I came up with my own version. It is refreshing like a mojito and crisp like a beer. Perfect for a hot summer night on my own.

My Pimm’s Cup

1/2 cup ginger beer
1/4 cup Pimm’s
splash of lemonade
two spears English cucumber
generous sprig of mint
ice

Into a tall glass with ice pour ginger beer, Pimm’s and lemonade. Drop in cucumber and mint. Stir. Enjoy!

    I start drinking WAY before that. Sometimes a nice drink around 4 can really help ease into the afternoon chaos around here. I need to try to make it happen more often. Your drink sounds yummy!

    You know that in the UK – lemonade is the word used for Sprite & 7-up type sodas. Feels odd putting real lemonade with Pimm's.
