My dear friend Adrienne stopped by for tea this morning. She is due very soon with her first baby, so we had a lot of fun talking about all the excitement and love in her life. Such a special time for her!
To make her visit more of an occasion I baked a fresh batch of homemade blueberry lemon scones. When I woke up at 6:35 am to make the scones, I was halfway through the recipe when I remembered that I ran out of baking powder the other day while making a sweet potato bread. Uggggg. I really didn’t want to pull on my Ugg boots and walk across the street to the market to buy baking powder before I had the chance to put on mascara and brush my hair. Fortunately, I had baking soda and cream of tartar, so it was easy to make a substitution. One teaspoon of baking powder is equivalent to 1/4 teaspoon baking soda + 1/2 teaspoon cream of tartar. Phew!
Blueberry Lemon Scones
1 3/4 cup flour
1/3 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
zest of one lemon
5 tablespoons cold butter, cut into cubes
juice of one lemon
1/2 cup frozen blueberries
Preheat oven to 400 degrees.
Whisk flour, sugar, baking powder, salt and lemon zest. Drop butter into mixture and knead into the flour until butter is crumbly and evenly combined. Add lemon juice and berries and knead a bit more. If dough still seems too dry, add a tablespoon of water.
Form dough into your desired shape (I made flattened balls) and bake on a cookie sheet for 12 minutes.

I just made a batch of these (minus the blueberries, but with mini-choco chips) from your recipe given at one of our group dinners from E-town! They are always a hit and especially so with me since they are soooo easy to whip up! What else have you substituted in? I was thinking of using dried cranberries next time! xoxo K
Kristy, I love the idea of dried cranberries! Perhaps you could use orange juice and some orange zest along with them??
