I love how a bowl of homemade salsa can turn a gathering into a party. When we went out to my sister’s house last weekend I prepared a few snacks for us to enjoy along with the vodka lemonades she made, and it was a summer evening well spent.
My mom makes something similar to this recipe, and it is an easy go-to snack. The ingredients are usually on-hand, and it is full of healthy and tasty vegetables. Just toss in whatever is in the fridge!
Black Bean and Corn Salsa
2 cups (1 can) black beans, drained
kernels from 2 ears of corn
3 green onions, thinly sliced
1 cup grape tomatoes, halved
juice from one lime
1 avocado, diced
a handful of chopped cilantro
salt to taste
Gently combine all ingredients. Chill until ready to serve with tortilla chips.
