Sometimes I feel like the luckiest wife in the world. Not only is my husband extremely smart, unbelievably driven, completely hilarious and adorably genuine, but he knows how to mix really good drinks. His cosmopolitans are my absolute favorite, and coming in at a close second are his mojitos.
The other night he mixed up a batch after we put the kids to bed. We had a brief taste of summer last week here in Chicago when temperatures approached 70, but this week the weather turned chilly again. But, after one taste of a fresh mojito I was instantly transported to a place where the sun always shines and I’m wearing flip-flops instead of Uggs.
Like a true Homemade Father, Chris makes his own simple syrup for cocktails. To make it, he stirs equal parts sugar and water in a pan. He brings the mixture to a boil and cooks until the sugar dissolves. Before using in drinks, he cools the syrup completely in the fridge.
Chris’ Mojito
10 Fresh mint leaves
Juice from 1 lime
2 shots white rum
1/2 shot simple syrup
Club soda
Add lime juice and mint to the bottom of a tall glass and muddle. Add rum and muddle some more. Drop in several ice cubes and simple syrup. Top with club soda to taste or until glass is full.
