Sweet Potato Breakfast Smoothie – Sweet!!

With the sun rising off Lake Michigan pretty early these days, the kids can’t sleep much past 6:15 am.  Fortunately, our usual Blueberry Spinach Smoothie is an easy and healthy way to start the day.  It is a nice energy boost for all of us.

This morning we were out of frozen blueberries – yikes!  With two hungry kids hanging off my legs I had to think fast and come up with a suitable solution.  I opened the fridge and saw a bowl of steamed sweet potatoes left over from last night.  The kids like cubed sweet potatoes dusted with cinnamon as a side dish at dinner, so I gambled that they’d be just as delighted with these flavors for breakfast.  I blended a sweet potato smoothie that was tasty and nutritious, and both kids finished their shakes before I had the chance to rinse out the blender!

Sweet Potato Smoothie

2 cups almond milk

1 teaspoon vanilla extract (I like using my homemade vanilla extract)

1/2 teaspoon ground cinnamon

big spoonful honey (we buy delicious raw honey from our co-op)

1 cup peeled, cubed and steamed sweet potato (it should be soft and tender)

1 banana

handful of spinach

ice

Combine all ingredients in a blender.  Pour into glasses and smile!

    I am thrilled to find someone else with leftover sweet potatoes and almond milk in their fridge. It will go perfectly with the zucchini and egg topped polenta bars I just took out of the oven. Thanks for sharing.

    This is fabulous! We used 1 cup of coconut milk and 1 cup of water instead of almond milk, and loved every bit of it. Thanks for the recipe!

    Sounds like something I’d like. I’ve been making smoothies with blueberries, spinach, and almond milk for a while, but I also add a tablespoon of Udo’s oil and an individual container of honey Greek yogurt. Tonight I added a scoop of vanilla protein powder and I had the feeling it would go great with sweet potatoes. I stumbled upon this and am going to use it as the basis for a sweet potato smoothie.
