Sunday Morning

I really treasure Sundays.  My husband has to work on Saturdays, so Sunday is our only day together as a family.  I usually get up early with the kids while Chris snoozes in.  We play toys, read a few books and prepare breakfast.  Its a nice way to start what is always a nice day.

The best part of Sunday morning is that life seems to move a little slower. We stay in our pajamas a little later, we enjoy a big breakfast, we avoid distractions and just savor these most precious few hours.  These days I can count on Evie to entertain Vivian while I handle meal preparations – they genuinely enjoy being together.  I’m so glad they have each other.

When breakfast is ready I send Evie and Mack upstairs to wake Chris up.  Yesterday he came down to a hearty plate of sausage and eggs (from our wonderful co-op) and fried tomatoes.  The kids enjoyed homemade waffles.  Quite a way to start the week!

Mack has been requesting waffles for breakfast lately, so I was so happy to see a recipe for them in last March’s issue of Bon Appetit magazine.  The only problem is that some of the ingredients (like buttermilk and club soda) aren’t always stocked in my kitchen, so I had to improvise with what is always on-hand.  My version turned out great – Mack asks for them every day!

Yummy Waffles

1 3/4 cups flour

1 tablespoon sugar

2 teaspoons baking powder

1 teaspoon baking soda

1 teaspoon kosher salt

3 eggs

1 cups (2 sticks) melted butter

1 cup milk + 1 tablespoon white vinegar, combined

3/4 cup water + 1/2 teaspoon baking soda, combined

Heat waffle iron until very hot.

Whisk flour, sugar, baking powder, baking soda and salt in a large bowl. Set aside.

Using an electric mixer, beat egg whites until medium-soft peaks form.

Meanwhile, whisk egg yolks, melted butter, milk-vinegar and water-soda in a medium bowl. Gradually whisk in dry ingredients. Fold in egg whites (this is always Mack’s favorite part!).

Cook in waffle iron according to instructions.
