Soba Noodles with Ginger and Spinach

Ever since Mack’s ear infection nearly a month ago, we’ve all taken turns fighting off cold symptoms. Runny noses, coughs, slight fevers.  Evie was up all last night coughing, and sweet little Vivian woke up at 4:30 this morning so sad and swiping at her ears.  I brought the kids to the pediatrician, and both Evie and Viv have ear infections.  Poor little lambs.

As the mom, there is no time for me to be sick or tired.  I’ve had a cold for a week and I got no sleep last night, but it was up to me to take care of three kids (and myself!) all day.  Whenever I’m feeling run-down I always crave fresh ginger. It is naturally warming, but the freshness makes me feel more alive. The quick lunch I came up with today was simple and nutritious – just what I needed.

Soba Noodles with Ginger and Spinach

3 oz soba noodles

1 tablespoon sesame oil

1 green onion, sliced

1-2″ piece of fresh ginger, peeled and grated

few handfuls fresh spinach

few good shakes soy sauce

Bring a pot of water to a boil and drop in soba noodles.  When noodles have one minute of cooking time left (according to package directions) add spinach leaves to the pot. Cook for a minute, remove from heat, drain and set aside.

In a large mixing bowl, combine sesame oil, ginger and green onion.  Drop noodles/spinach in and toss well. Season to taste with soy sauce. If you’re looking for more protein, some tofu, chicken or shrimp would work well.
