Protein Pancakes

We never have cold cereal for breakfast – the few times I tried feeding it to Evie she looked at me as if she was thinking “Sorry, Mom. This just isn’t going to cut it.” During the week I usually make steel cut oatmeal or a smoothie, but on the weekends I spend some extra time making a heartier breakfast. Its such a nice ritual and a good way to end and begin a busy week.

This is my riff on a recipe for “Protein Pancakes” that my Aunt Hope shared with me a while ago. I have no idea where her original recipe came from, but I am so happy its part of my files! Loaded with protein and healthy oats, they really are an excellent way to start the day, and they have a similar taste and texture to ordinary pancakes. And, this recipe is super easy to prepare and clean up. When I made some this morning, Chris said, “These are so good – why bother making regular pancakes?!”

Protein Pancakes

1 1/4 cups dry old fashioned oatmeal
1/4 cup water
6 egg whites
1 cup cottage cheese
a splash of vanilla or some cinnamon, if you feel like it

Combine all ingredients in a blender and mix until well incorporated. Pour directly from the blender onto a greased hot pan or griddle. Cook for 2-3 minutes per side, or until browned. This recipe makes 5-6 good-sized pancakes, or enough to feed two adults and one toddler 🙂

Top with fresh fruit, homemade strawberry jam, homemade yogurt, honey, maple syrup…

    Just a suggestion…:) I'd stick those yolks from those 6 eggs in your pancakes. Egg whites contain enzyme inhibitors that can interfere with protein digestion – you definitely need yolks! There's a lot of info about it at http://www.westonaprice.org.

    Thanks for the feedback, Devon81. Yes, I agree that eating the whole egg makes the most sense, especially since that is what Mother Nature intended.

    I tested this recipe with whole eggs this morning and they were quite dense. I think using only egg whites yields a lighter and fluffier pancake.

    I love the taste, but my body doesn't love the cholesterol or calories in yolks so I'm a white's girl. I need to make these again this weekend.-Hope

    So glad you like the, Robin! And, I love your idea of adding chocolate chips. Sometimes we toss in some blueberries.

    You should also try the quinoa pancakes – another healthy breakfast treat 🙂
