Meez Meals – Night 1 – Brussels Sprouts and Tofu in a Sweet Chili Sauce

Ever since Vivian was born three weeks ago I’ve struggled to balance my time and energy.  I still value the homemade lifestyle, but with time a luxury I’m ashamed to admit that Evie and Mack have had PBJ’s for dinner a few too many times lately (granted, the peanut butter and the jelly are homemade!).  I need to start making dinner interesting again!

The other day my neighborhood friend Virginia told me about Meez Meals, a meal delivery service that made her life much easier. Virginia recently welcomed her third baby, too, so I know we’re in the same boat. The beautiful thing about Meez Meals is that it is semi-homemade.  The nutritious meals are prepped and ready for assembly, saving me time on shopping and chopping.  I still cooked a healthy homemade dinner, but the time-intensive parts were taken care of by Meez.  I consider this wonderful service to be a gentle way for me to ease back into homemade meal-making.

Five four-serving Meez Meals cost $110.  Considering that our grocery budget is ~$175/week, I think spending $110 for a week’s worth of fully prepped dinners is a very fair price.  Plus, tonight’s dinner left us with enough left-overs for lunch, so it makes the value even more appealing.

This is our first week with the service, and after tonight’s dinner of Brussels Sprouts and Pan Fried Tofu in a Sweet Chili Sauce I am already a true believer in the power of Meez!  I spent 15 minutes in the kitchen (while nursing Vivian, thank-you-very-much!), but dinner tasted like a professional chef had worked all afternoon.  Seriously, it was delicious, and I never considered myself to be a fan of Brussels sprouts. But, this meal was so awesome that I’m a Brussels convert now.

I contacted the owner and asked for the complete recipes, and she was very kind to oblige.  Thought it would be fun to share one every night with the Homemade Mothering community!!  Enjoy!

Brussels Sprouts and Pan Fried Tofu in a Sweet Chili Sauce


2 pounds Brussels Sprouts, sliced in half

3 cups button mushrooms, chopped

2 cups green onions, chopped

3 tablespoons soy sauce

2 cups cilantro

6 tablespoons sesame oil

2 tablespoons brown sugar

2 teaspoons rice vinegar

10 oz baked yellow tofu

2-4 tablespoons Sriracha

1 jalepeno, finely diced

In a small bowl mix mushrooms and green onion.  Set aside.

In a medium bowl, mix soy sauce, cilantro, sesame oil, brown sugar, rice vinegar, Sriracha and jalepeno.  Set aside.

Heat a large skillet over high heat. Add 1-2 T olive oil (or skip it if you have a non-stick pan) and cook the tofu until it gets crispy, about 2 to 5 minutes. Remove the tofu and put it into the soy sauce mixture.

Add 2 to 4 T olive oil to the hot pan and add as many of the Brussels sprouts as will cook comfortably, as well a pinch of salt. (Work in
batches if the pan is getting crowded.) Cook for about 2 minutes, and resist the urge to stir. You want the sprouts to get a little browned in places. After about 2 minutes, the sprouts will be cooked but still crunchy, just the way we love them.

Add the mushroom mix and cook 3 minutes. Add the tofu/soy sauce to the pan and cook for 2 minutes.
