Mañana Banana Granola Smoothie

During our recent trip to Mexico, I pretty much ate my way around the little island we called home for 8 days.  Sweet Mexican grandmothers prepared tortas and sopes for breakfast at the local mercado. Homemade coconut paletas (popsicles) were our favorite afternoon treat on the beach. Fresh fish for lunch and dinner (with generous dollops of guacamole and pico, of course) was our standard meal. It was wonderful!

One of my favorite breakfast treats came from the island’s local used book store. Along with weathered romance novels and dog-eared travel guides for 25 pesos, the shop offered a wide array of simple and healthy snacks.  We stopped in on more than one occasion!

The first time I ordered the banana-granola smoothie I had to take it “to-go” as we were heading back to the hotel for Vivian’s nap.  The shop was out of disposable cups so they improvised: an empty yogurt container with a hole cut into the lid. It made a perfectly fine cup-on-the-go! The employee apologized for the container – little did she know how excited I was to see such a smart use of trash! I wish Americans were more open to creative repurposing…

Mañana’s Banana Granola Smoothie

1 cup milk or water

1 1/2 bananas

A generous scoop of really good granola (here’s my recipe for homemade granola)

a dash of sugar

ice (if its a hot day)

Combine all ingredients in blender and mix well.
