Homemade Raspberry Sauce

Oh how I love our neighborhood produce market.  I never know what I’m going to find there, but I go at least once a week to check out the deals and stock up on organic produce for half the price of conventional stuff at the regular grocery store.  Last weekend I found 6 oz packages of organic raspberries for just $0.49!  I couldn’t help myself: I bought 12 packages!

Mack will eat berries for breakfast, lunch and dinner.  He was so happy to gobble up fresh raspberries by the handful.  I think he went through three little containers in one sitting!

With the remaining packages, I made a quick batch of raspberry jam and a simple raspberry sauce.  The sauce was delicious atop Saturday morning waffles.  Evie liked dipping her waffles bites right into the sauce.  Mack was happy to race his waffle pieces into smears of sauce on his place.  Vivian just kept saying, “it’s delicious!”

Homemade Raspberry Sauce

24 oz fresh raspberries

1/4 cup sugar

1/4 teaspoon salt

3 tablespoons butter (optional but delicious!)

In a small saucepan, combine raspberries and sugar.  Cook over low heat. Stir often!

Once raspberries have cooked down to a consistency you like (at least an hour), stir in salt and butter. Serve warm on top pancakes, waffles, ice cream…!!!
