Happy Fourth of July!


Yesterday afternoon I offered to bring a dessert to a picnic. The problem? I offered to make it just two hours before the party started! So, I had to think quick and come up with a special treat that could be prepared in a hurry.

I searched through my memories of 4th of Julys from my childhood and resurrected this one. I didn’t know the exact recipe, so I improvised and came up with a very good recreation.

While I usually prefer to make everything from scratch, I was short on time yesterday. This recipe calls for a roll of pre-made cookie dough and Cool Whip — and since I am a homemade mother I would have rather made my own cookie dough and fresh whipped cream. But, I did what I had to do. At least I didn’t bring a dozen grocery store cupcakes or a frozen factory-made pie!!

Fruit “Pizza” recipe

1 tube premade sugar cookie dough
1 container Cool Whip
1 stick cream cheese, softened
1 cup powdered sugar
assorted in-season fruit

Pull apart the dough and press it into a greased 9×13 pan (I didn’t use all the dough). Bake at 350 degrees for 25 minutes, or until evenly browned and cooked through. Remove from oven, bang it on the counter to flatten it out a bit, and let it cool completely.

Meanwhile, blend the Cool Whip, cream cheese and powdered sugar until fluffy and well combined. Chop the fruit.

Spread the whipped topping on the cooled cookie crust and top with the colorful fruit. When I was little we’d arrange blueberries and strawberries to look like the American flag. Be creative!
