Cookies for a Little Chocoholic

Little Evelyn is a total chocoholic. Just like her grandma, she needs at least a little bite of it every day in order to maintain sanity. So, when my friend Sarah over at PersonalFaves.com blogged about chocolate cookies she recently baked I knew I had to try out the recipe. Evie refused to nap this afternoon so we kept busy making a batch.

The recipe is super easy and surprisingly fast. Best part? The cookies taste like quick little brownie bites! They certainly pleased my little chocoholic!

Ingredients

1 cup butter, softened
2 eggs
1 1/2 cups white sugar
2 teaspoons vanilla extract
2 cups flour
2/3 cup cocoa powder
3/4 teaspoon baking soda
1/4 teaspoon salt
2 cups chocolate chips

Directions

Preheat oven to 350 degrees.

In large bowl, beat butter, eggs, sugar and vanilla till fluffy. In a separate bowl, mix flour, cocoa powder, baking soda and salt. Stir dry ingredients into butter mixture. Mix in chocolate chips.

Drop by spoonful onto ungreased cookie sheets. Cook for 8-10 minutes.

When I took the pan out of the oven I smacked it on the counter top. This gets the air out of the cookie and yields a more dense cookie. I just like it better that way!
