Oh, what a day. Three sick kids. One kid not cooperating. One baby up at 3:58 am (which means that I was up at 3:58 am). One sick babysitter who we all love and depend upon. A daunting to-do list that never seems to shorten. Worst of all, my grandma is so sick and her condition makes me so sad.
I kinda want to crawl into a cave and hibernate until spring.
I’m not one to normally drown my sorrows with food – usually when I am stressed I forget to eat, which doesn’t help. But, a bottle of Kerrygold Irish Cream Liqueur and a pint of my favorite vanilla ice cream were lurking in the kitchen. If ever there was a day to treat myself to a little something boozy and sweet, today would be it. Plus, the Kerrygold liqueur is made with Irish cream from grass-fed cows, so it is super rich and smooth. Yum!
Chris and I drank this milkshake almost too fast. Once it was done, we both looked to the other’s glass to try to steal a sip.
Cheers to the end of a crappy day!
Kerrygold Irish Cream Shake
2 cups really good vanilla ice cream (my favorite brand is Graeter’s)
1 1/2 cups whole milk
1/4 cup + Kerry Gold Irish Cream Liqueur
4 ice cubes
Combine all ingredients in a blender and blend until creamy and smooth. Pour into fancy glasses and share with the one you love. Or, don’t share it and hoard it all to yourself like a greedy vulture. No judgement.
