The local produce market I shop at every week always has some amazing deals. A few weeks ago HUGE boxes of Florida oranges were only $2.98, and as I wrote about before I once scored 11 pounds of orange peppers for just $1.00. This week’s super deal was 6 oz containers of organic blackberries for just $0.49 each. I put 12 containers into my cart, as they are Mack’s absolute favorite snack.
Since Mack can’t eat all those blackberries before they go bad, I turned half of the haul into homemade blackberry jam. What a treat in the dead of winter! Stirred into homemade yogurt, smeared on toast, or just eaten by the spoonful, there is nothing better than the simple sweetness of freshly prepared jam when snow still cakes the sidewalks.
Mack used some of the homemade blackberry jam to make PBJ sandwiches for himself and his sisters today. Such a nice little helper in the kitchen.
Homemade Blackberry Jam (makes 1 quart)
6 six-ounce containers organic blackberries
3/4 cup sugar
Drop berries and pour sugar into a medium sauce pan.
Turn heat on to low and gently mash with a potato masher. Stir often (to prevent burning on the bottom). Cook for 45 minutes to 1 hour (or until desired consistency is reached – it will firm up as it cools). Pour into a glass container and store in the refrigerator.
