Homemade Almond Butter

For the past couple months Trader Joe’s has had a shortage of almond butter.  Lately my husband has been using it every day in a smoothie, so the shortage at TJ’s was becoming an issue! Ha!

I’m not sure why I continued to buy almond butter when we’ve prepared homemade peanut butter for so many years now.  Probably because we don’t go through it as fast as peanut butter.  But, I’m glad Trader Joe’s has a shortage, because it prompted me to (finally) just start making it on my own.  We save $1.00 a jar and create a lot less trash, too.  It was about time!

Homemade Almond Butter

Drop 1 pound of roasted almonds (we prefer unsalted) into a food processor (NOT a blender).  Turn it on and let the machine work for a few minutes.  It might look mealy at first, and then dry and kinda clumpy, but if you give it time it will magically turn into a creamy treat.

If you want crunchy almond butter, reserve some of the almonds and drop into the processor once the batch is already creamy.

Store in a glass mason jar and keep in the fridge.

    1. Would it work with raw almonds? Have you ever tried?
    2. What kind of food processor do you have? We don’t have one, but the TJ’s shortage has been driving us crazy too! I might just need to bite the bullet and get one.

    Can you tell me approximately how long it lasts in the fridge without spoiling? Thanks for posting this recipe- as well as the pecan pie without corn syrup, we’re making that at our house this Thanksgiving (it’s in the oven right now actually and looking great!) and I’m very excited to try both of them.
