My sixteen month old little big girl has moved on from pureed baby food. Since she made the transition a couple months ago, she has been uncharacteristically picky when it comes to food. She loves eggs, string cheese, pears and apple sauce, but even I was getting bored with those. Time to get creative!
In the spirit of the season, I thought I would make her a warm and satisfying pumpkin soup. But, since she tends to make a big mess at every meal, I needed to thicken it up a bit so it would stay on the spoon as it traveled from the bowl to her mouth. She LOVES this soup – lots of lovely flavor and its fun to eat!
Evie’s Pumpkin Soup
2 cups vegetable or chicken broth
1 can pureed pumpkin
1/3 cup apple sauce
1/3 cup macaroni pasta
Bring broth to a boil and add pumpkin. Stir well to combine and add pasta. Stirring often, cook pasta according to package directions. Sprinkle in some thyme, nutmeg and cinnamon.
This keeps in the fridge for about 3 days. It is easy to warm it up in the microwave and then let Evie feed herself.
Barley & Peas
Using broth instead of water, cook barley according to package directions. I added a little extra liquid than called for to keep the barley moist and flavorful once it was cooked, especially since I’d be refrigerating it for a few days.
At meal time, warm up an adequate portion in the microwave. Heat up some frozen peas in a separate bowl. Mix the two together. Evie loves this, and it is a great way to sneak some veggies into her meal!
